Ingredients

For the Crisp Topping

  • 100g AP flour
  • 165g brown sugar
  • 1 tablespoon lemon zest
  • 1 teaspoon kosher salt
  • 100g pecans
  • 145g butter

For the Apple Filling

  • 4 apples
  • 3 tablespoons sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon kosher salt
  • 1 tablespoon lemon juice (or whiskey)

Method

  1. Preheat oven to 375°F.
  2. Add the pecans and pulse briefly to start breaking them up.
  3. Cut the butter into cubes and add to the processor. Pulse until mixture forms pea-sized chunks.
  4. Place mixture in the fridge while you prepare the apples.
  5. Wash the apples (leave the skins on). Cut out the cores and chop the apples into 1-2 inch chunks.
  6. Toss the apples with the sugar, cornstarch, salt and lemon juice/whiskey.
  7. Place the apple mixture in a 2-quart baking dish. Sprinkle the crisp mixture evenly on top.
  8. Bak for 45 minutes.
  9. Let stand at room temperature for 15 inutes before serving.
