Ingredients
For the Crisp Topping
- 100g AP flour
- 165g brown sugar
- 1 tablespoon lemon zest
- 1 teaspoon kosher salt
- 100g pecans
- 145g butter
For the Apple Filling
- 4 apples
- 3 tablespoons sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon kosher salt
- 1 tablespoon lemon juice (or whiskey)
Method
- Preheat oven to 375°F.
- Add the pecans and pulse briefly to start breaking them up.
- Cut the butter into cubes and add to the processor. Pulse until mixture forms pea-sized chunks.
- Place mixture in the fridge while you prepare the apples.
- Wash the apples (leave the skins on). Cut out the cores and chop the apples into 1-2 inch chunks.
- Toss the apples with the sugar, cornstarch, salt and lemon juice/whiskey.
- Place the apple mixture in a 2-quart baking dish. Sprinkle the crisp mixture evenly on top.
- Bak for 45 minutes.
- Let stand at room temperature for 15 inutes before serving.
