Ingredients

    (makes 1/2 a cup of dressing)

  • 2 tablespoons of red wine vinegar (or similar acid)
  • 1 teaspoon dry mustard
  • 1 pinch of salt to taste (around 1/8 teaspoon)
  • 1 pinch of pepper to taste (around 1/8 teaspoon)
  • 1/4 cup of olive oil
  • (optional - a smattering of dried or fresh herbs)

Method

  1. Combine all the ingredients, except the olive oil, in a jar slightly wider than your immersion blender.
  2. Place the immersion blender into the jar.
  3. Pour in the olive oil.
  4. Blend for 15-30 seconds.
  5. Store in the fridge.Shake vigourously before using to revitalize it.
