Ingredients
(makes 1/2 a cup of dressing)
2 tablespoons of red wine vinegar (or similar acid)
1 teaspoon dry mustard
1 pinch of salt to taste (around 1/8 teaspoon)
1 pinch of pepper to taste (around 1/8 teaspoon)
1/4 cup of olive oil
(optional - a smattering of dried or fresh herbs)
Method
Combine all the ingredients, except the olive oil, in a jar slightly wider than your immersion blender.
Place the immersion blender into the jar.
Pour in the olive oil.
Blend for 15-30 seconds.
Store in the fridge.Shake vigourously before using to revitalize it.
