Ingredients
- 500g rolled oats
- 1 cup pumpkin seeds
- 1 cup sunflower seeds
- 1 cup sliced almonds
- 1/2 cup bran
- 1/2 cup flax seeds
- 1 cup shredded coconut
- 1 tsp canola oil
- 200g honey
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 & 1/2 cup dried fruit
Method
- Preheat the oven to 350°F
- Combine the first six ingredients in a large bakong dish and bake for 15 minutes.
- Add the coconut, stir, and bake for another 15 minutes.
- Stir the granola to ensure even cooking. Bake for another 10 minutes.
- While the granola is baking, add the oil and honey to a saucepan and heat until the mixture starts to bubble.
- Remove the granola from the oven. Add the honey mixture and stir thoroughly.
- Returned the honeyed granola to the oven for a further 10 minutes.
- Remove from the oven and stir the spices through while the granola is still hot.
- Allow to cool for 15 minutes, then add the dried fruit.
- Store in an airtighht container.
