Ingredients

  • 500g rolled oats
  • 1 cup pumpkin seeds
  • 1 cup sunflower seeds
  • 1 cup sliced almonds
  • 1/2 cup bran
  • 1/2 cup flax seeds
  • 1 cup shredded coconut
  • 1 tsp canola oil
  • 200g honey
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 & 1/2 cup dried fruit

Method

  1. Preheat the oven to 350°F
  2. Combine the first six ingredients in a large bakong dish and bake for 15 minutes.
  3. Add the coconut, stir, and bake for another 15 minutes.
  4. Stir the granola to ensure even cooking. Bake for another 10 minutes.
  5. While the granola is baking, add the oil and honey to a saucepan and heat until the mixture starts to bubble.
  6. Remove the granola from the oven. Add the honey mixture and stir thoroughly.
  7. Returned the honeyed granola to the oven for a further 10 minutes.
  8. Remove from the oven and stir the spices through while the granola is still hot.
  9. Allow to cool for 15 minutes, then add the dried fruit.
  10. Store in an airtighht container.
