Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 yellow onion , diced
  • 2 cloves garlic , minced
  • 15 ounces tomato sauce
  • 1/2 cup apple cider vinegar
  • 1/4 cup tomato paste
  • 3 tablespoons Worcestershire
  • 1 tablespoon paprika
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

Optional extras depending on your tastes

  • brown sugar
  • chilis
  • liquid smoke
  • cumin>
  • fennel

Method

  1. Add the oil and onions to a large pot on medium heat and cook until the onions are softened (~4 mins), stirring occasionally.
  2. Add the rest of the ingredients and stir well.
  3. Bring to a simmer and cook for 10 minutes until the sauce has thickened.
  4. Taste test and adjust spiciness or flavor. Cook a further 5 to 10 mins.
  5. Use straight away or refrigerate until next time you need it.
