Ingredients
- 400g almond paste
- 360g powdered sugar, sifted, plus more for dusting
- 2 large egg whites, lightly beaten
- 1/2 teaspoon almond extract
Method
- Coarsely break the almond paste into chunks in your mixing bowl.
- Add powdered sugar to the bowl and mix on low speed it's like breadcrumbs.
- Speed up the mixer until the mixture starts to clump.
- Add the egg whites and almond extract. Mix until the mixture starts to look like dough and forms a ball.
- Dust a countertop with powdered sugar and knead the marzipan until smooth.
- Use immediately or store in cling film for later.
