Ingredients

  • 400g almond paste
  • 360g powdered sugar, sifted, plus more for dusting
  • 2 large egg whites, lightly beaten
  • 1/2 teaspoon almond extract

Method

  1. Coarsely break the almond paste into chunks in your mixing bowl.
  2. Add powdered sugar to the bowl and mix on low speed it's like breadcrumbs.
  3. Speed up the mixer until the mixture starts to clump.
  4. Add the egg whites and almond extract. Mix until the mixture starts to look like dough and forms a ball.
  5. Dust a countertop with powdered sugar and knead the marzipan until smooth.
  6. Use immediately or store in cling film for later.
