Ingredients

  • 4 egg whites
  • 1 cup white sugar

Method

  1. Preheat oven to 240°F.
  2. Whisk egg whites until stiff (3-5 minutes in a stand mixer).
  3. Add half the sugar and beat until combined.
  4. Repeat with the remaining sugar (for about 5 minutes).
  5. Fit a pastry bag with a large nozzle, then fill the bag with the meringue mixture.
  6. dab a small amount of meringue mixture in the corners of an oven tray and large parchment paper on top.
  7. Pipe the mixture onto the parchment paper in the sizes and shapes you want.
  8. Bake for around 90 minutes (the meringues shouldn't be browning).
  9. Remove from oven and allow to cool for at least 15 minutes.
