1/2 teaspoon of rose water (or flavouring of your choice)
a few drops of food colouring

Method
In a medium saucepan, sprinkle the 2 tablespoons of gelatin and add 3/4 cup of water. Let it sit for 10 minutes to allow the gelatin to soften.
After 10 minutes, add 2 cups of sugar and 1 cup of boiling water to the gelatin. Stir until the sugar is completely dissolved.
Bring to a boil, then let boil for 15 minutes.
Remove from heat and stir in the ascorbic acid (or tartaric acid), rose water (or your chosen flavouring), and a few drops of food coloring. Mix well to ensure everything is combined.
Pour the mixture into a shallow, rectangular dish that's been lined with cling film (optional) and liberally wet with water. Leave it to set at room temperature until firm (around 24 hours).
Once set, turn the Turkish Delight out onto a surface dusted with icing sugar or cornstarch. Cut it into small cubes using a knife (dust the knife with icing sugar if it's getting too sticky). Dust each piece thoroughly with icing sugar or cornstarch.
