Ingredients

  • 1 tablespoon gelatin
  • 1/4 cup cold water
  • 1/2 cup glucose syrup (or light corn syrup)
  • 1 tablespoon glycerin
  • 2 tablespoons shortening
  • 8 cups powdered sugar

Method

  1. In a heatproof bowl, sprinkle the gelatin over the cold water and let it sit for a 10 minutes.
  2. Place the bowl over a pot of boilign water until the gelatin dissolves.
  3. Add the glucose syrup, glycerin, and shortening to the gelatin mixture. Heat again until the shortening is melted.
  4. Place half the powdered sugar in a large bowl. Make a well in the center and pour the gelatin mixture in. Stir with a wooden spoon.
  5. Add half the remaining sugar and mix in.
  6. Turn the mixture out onto a surface dusted with the remaining confectioners' sugar. Knead the mixture until the fondant is smooth and not picking up any more sugar.
  7. Use the fondant immediately or wrap in cling film.
