Ingredients
- 1 tablespoon gelatin
- 1/4 cup cold water
- 1/2 cup glucose syrup (or light corn syrup)
- 1 tablespoon glycerin
- 2 tablespoons shortening
- 8 cups powdered sugar
Method

- In a heatproof bowl, sprinkle the gelatin over the cold water and let it sit for a 10 minutes.
- Place the bowl over a pot of boilign water until the gelatin dissolves.
- Add the glucose syrup, glycerin, and shortening to the gelatin mixture. Heat again until the shortening is melted.
- Place half the powdered sugar in a large bowl. Make a well in the center and pour the gelatin mixture in. Stir with a wooden spoon.
- Add half the remaining sugar and mix in.
- Turn the mixture out onto a surface dusted with the remaining confectioners' sugar. Knead the mixture until the fondant is smooth and not picking up any more sugar.
- Use the fondant immediately or wrap in cling film.
